Individual recipes on this blog provide details about how to cook different types of food in your halogen. You can follow the recipes or see if you can create your own recipes using those provided for guidance. If you are concerned about cooking meat, I would advise using a meat thermometer. If the temperature is too high, the meat or joint will brown quickly on the surface but may not be cooked in the middle. There are two standard racks which come with every halogen oven — a high and a low rack.

The high rack is placed nearer the element so use this if you want to brown something. The low rack is used more for longer cooking times. You can also cook directly on the bottom of the bowl. I do this quite often, particularly if I am being lazy and just want to chuck in some oven chips. It does cook well but takes a little longer as compared to using the racks, as air is not able to circulate all around the food.

Some people worry about using the halogen to bake cakes but I think this is because they are setting the oven temperature too high, resulting in a crusty brown cake top with a soggy middle.

Setting the oven to a lower temperature can solve this problem. Muffins and cupcakes take between 12 and 18 minutes. You only really encounter problems with cakes if you are cooking for too long at too high a temperature. Try some of my cake recipes and you will see how simple it can be.

This is probably due to the speed the oven takes to reach its temperature setting. However, I think it is worth turning the oven on 5 minutes before use just to bring it up to the right temperature. I found this to be the case when attempting to cook soft-boiled eggs. According to the Flavorwave recipe book, I should be able to cook a soft egg in 6 minutes just by placing it on the high rack. I am constantly being asked for the recipes for my cakes and it always throws me into turmoil as I never measure anything when baking.

My husband laughs as he sees me literally throwing in all sorts of ingredients, seemingly oblivious to the end result. Thankfully they all come out perfectly yummy! There is some great measuring equipment available to make life. They are ideal for recipes that need teaspoon, tablespoon or dessertspoon measurements. These are good for measuring dry ingredients or liquids. Some show measures for key ingredients such as flour or sugar, others just measure in millilitres.

I use a glass Pyrex measuring jug.

They are very hardy and come up gleaming after every wash — unlike plastic jugs which can stain. Measuring jugs are ideal for measuring liquids or mixing ingredients together. I also have a great Pyrex measuring jug which shows grams for sugar, flour and mixed fruit.

I have picked up various pieces of kitchenalia from boot sales and auctions over the years. Find a set of scales that suits your kitchen. I like the retro-looking scales with a deep bowl which is ideal for weighing a variety of ingredients.

See the table below for clarity. I hope this has been helpful and not confused you. Move on to try some recipes and then come back to this chapter at a later date — it will probably make more sense then! I heat pasties at c for about minutes if from cold — I would say this would be about right for individual pies — for bigger pies you may want to extend the times. If a recipe or reheating instruction lists for a traditional oven, use that a guideline but monitor it if you are nervous.

The halogen has been marketed to speed up cooking times, but really use it like a normal oven — the beauty being not the speed but the economy of only heating a small oven and being able to see exactly how things are cooking. Today, I found your blog and am chuffed to bits.

Will be coming here to read as often as I can. Keep the pages coming, I love them, Jen: Great to hear from you Ann, would you like to share your Cheese Scone recipe with us? Glad you are finding it exciting. You must try cooking meat. My dad says the roast chicken was the best he ever tasted — I think this is due to cooking the bird upside down for the first half an hour as this allows the juices to run into the breast.

Some halogens do fluctuate in temperature so it may be advisable to use a meat thermometer when you first start to cook a joint, just until you are confident with it all. Keep us posted on your progress and any new recipes you create. Glad you like the site Jen, goodluck with experimenting with your Halogen, I am sure you will love it. Unlike most ovens, they heat up in seconds and can be used to roast, grill, steam and bake.

Let us know how you get on. Most people find my book, The Everyday Halogen Oven Cookbook is a great start to getting to grips with it all. I use mine daily and my son has just downloadd one for his student flat. The oven is quite easy to clean — I pop my bowl in the dishwasher and it comes out gleaming.

I wipe the lid inside on the glass edge with a cleaning wipe and this seems to keep it ok, even after a roast. Refer to your manufacturers instructions on cleaning the lid as machines can vary.

Let us know how you get on with the roasting bags — we can do a little feature on them if successful! Glad the scones came out well — I might make some myself tonight!

How exciting to find a new way of cooking in the halogen — thanks so much Ann, I hope other readers find this as interesting as I do — I am off now to download some roaster bags!

I am a first time Halogen oven user, having had gas or convection microwave ovens. I need to cook low GI because of Diabetes, but find it difficult to get the right recipes with times, that would be for bread and cakes. Any suggestions? Its my new toy and I love it.

Cooked a small pork roast which came packaged in a cooking bag, worked well. I tried the method of roasting chicken as given in the very limited book accompanying the oven, which suggested 20mins breast up, then 20 mins turned over breast down and again breast up for last 20 mins, with not good results…….. Should have just cooked it breast up as per usual. Will just have to try again. However if you download stuffed boneless chicken for roast, which comes in a tin foil container, the result is great.

Very juicy. The buttermilk and self raising flour bread, which cooks in ANY oven, also works well, but I think the temp should be lower, or the outside gets too hard while the inside still damp. Mix together with a knife, bake in buttered floured bread pan rectangular or round at deg C , for 1 hour.

I think the temp should be lowered to or maybe I use in my convection microwave. The Halogen oven can cook meat slightly quicker than the conventional oven, though you have to be careful to get your temperature settings right, personally I prefer to ignore the speed and cook for taste, so I tend to use the halogen as if it was my conventional oven. Be aware when cooking, too high and the tops of the joints or bird will burn whilst the middle may remain raw or undercooked.

I would advice using a temperature gauge to test your meat, particularly poultry or joints of meat until you are more confident — even when following a recipe.

Many of the bulbs seem to be hard wired into the top and hard to replace when they burn out. Only a very few manufacturers made the bulb replaceable and sell the replacement halogen bulbs.

But, people say these replacement parts are expensive and require a lot of specialized expertise to install back into the units, so it can be cheaper and easier to download a whole new machine. In doing your research before downloading, you probably should try to contact the manufacturer to clarify what happens if you need replacement parts. If you need replacement bowls, often people suggest looking on site for people selling them after the electrical part of their machine has packed it in.

It is best not to use these countertop ovens for slow cooking. These are not meant to be slow cookers, they are rocket ships designed for speed, as one site reviewer put it.
